Jose Elmer owns El Diamante, a 3-hectare farm located at 1800 meters above sea level in Jaén. Jose, along with his son, manages the operation of the farm. He grows varietals such as Caturra, Catuai, Castillo, Gesha, and Maragogype. For this lot, Jose picked the best cherries, specifically Red Bourbon, from the harvest.

His farm is one of the few areas in Jaén with protected forests that are home to native plants and animals. There are also numerous water sources that supply the city. This thriving ecosystem creates ideal conditions for coffee cultivation and enriches the soil.
