This coffee was grown by Jairo Arcila at Finca Santa Monica. It underwent a 72-hour dry anaerobic fermentation with dehydrated mango, and wine yeast. The result is a vibrant, mango-driven coffee with expressive aromatics and layered fruit sweetness.
